Ingredients

  • 2 cups flour
  • 1/2 cup white sugar
  • 1 1/2 teaspoon baking soda
  • 1 tablespoon poppyseeds
  • A pinch of salt
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup canola oil
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

Gather your ingredients. Preheat your oven to 400ºF.

In a large bowl mix the flour, sugar, baking soda, poppyseeds, and salt together.

In a small bowl mix the lemon juice and zest, oil, milk, eggs, and vanilla together.

Pour the small bowl into the large bowl and mix.

Line a cupcake tray with reusable, silicone cupcake liners or disposable paper cupcake liners.

Scoop 1/4 cup of the batter into your cupcake liners.

Place in the oven and bake for 10 minutes

These muffins are really good with Glaze
