Using Fresh VS Frozen or Pre-cut Squash.

Using fresh squash is wonderful. But it has a disadvantage. It can be hard to cut. So be careful! If you don’t want to cut fresh squash, you can buy precut fresh squash in the supermarket. It’s usually in the produce section.

You can also use frozen squash as an alternative to fresh squash. Frozen squash comes in handy when you need to speed up the cooking process and get soup on the table fast.

It's getting closer to the fall and winter! Time for soup! This Butternut Squash Soup will keep your heart warm and your tastebuds satisfied!

Ingredients

  • 1 large butternut squash
  • 4 tablespoons butter (2 tablespoons melted)
  • 2 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 tablespoons maple syrup
  • 1 cup of water (to steam)
  • 6 cups vegetable or chicken broth
  • 1/2 of an apple (peeled)
  • 1/2 of a medium red or yellow onion.

Instructions

Start by preheating your oven to 400ºF. If you are using a fresh squash, cut it, remove the seeds, peel it, and chop it into cubes.

Then place your cubes into a casserole dish. Then pour over the squash, 2 tablespoons of the butter (melted), 1 teaspoon of the cinnamon, and 2 tablespoons of the maple syrup onto the squash and mix until the cubes are covered. Once your squash cubes are covered, pour 1 cup of the water in the dish. Then place in the preheated oven for 40 minutes.

Then saute up the peeled apple and onion in the large soup or stockpot. After the squash is cooked, transfer the squash and all the leftover liquids into the large soup or stockpot. Pour the 6 cups of broth into the pot (if you don't have broth, you can use a bouillon cube with the equivalent amount of water.) Place a lid onto your pot and turn the heat to medium-high to simmer for 10 minutes.

Stir in the rest of the butter, the rest of the maple syrup, salt, and pepper. Then get your stick blender, and blend your soup until smooth. Once your soup is smooth, then place your lid back on the pot. Place your pot onto the stove on low heat until served.

Homemade dinner rolls are perfect for any family gatherings or events, because you can whip them up in no time. These simple fall dinner rolls will show people that you have taken time to make a very delicious (and healthier than store bought) rolls.

Dinner rolls can be used for anything! Breakfast; just put some of your favorite spread on them! Lunch; you can easily make some PB&J’s on them or serve these with a salad! It's getting into the Fall Season! Which means... Soup time! Whip out your flour, it's time to make Fall Dinner Rolls!

Ingredients

  • 1 tablespoon yeast
  • 1/2 teaspoon salt
  • 1 1/2 cups warm water
  • 2 tablespoons vegetable oil + 1 teaspoon for greasing
  • 2 tablespoons honey
  • 3-3 1/2 cups flour
  • 1/4 butter (for the top)

Instructions

Start by mixing the water, salt, honey, oil, and yeast in your stand mixer. Let the yeast active for 5-7 minutes.

Once your 5-7 minutes is up, add in the flour and mix on low speed. Once your dough has come together, grease your stand mixer with your oil and place your dough back into your mixer. Then cover it with a cloth, let your dough rise for 45 minutes.

Once your dough is finished rising and doubled in size, line a 13x9 inch casserole dish with parchment paper. Once done, roll your dough into 12 three inch balls. Place your dough in your dish about 1 inch apart from each other. Once you have finished preparing your dough balls, cover with saran wrap or aluminum foil and let sit for 45 more minutes.

Once your 45 minutes are up, preheat the oven to 350ºF. Place your rolls (Uncovered) into the oven for 15 minutes. While your rolls are cooking, melt the butter. Once the rolls come out of the oven, spread your melted butter all over the rolls.

Ingredients

  • 2 3/4 cup all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 8 tablespoons (1 stick) butter
  • 1/2 cup vegetable oil
  • 5 eggs (at room temperature)
  • 1 cup milk
  • 1 tablespoon vanilla.

Instructions

Start by preheating the oven to 350ºF. Then prepare your cupcake tray or cake pan.

In a separate bowl, beat butter, sugar, and oil until fluffy. Then beat the eggs in one at a time, then the vanilla and mix until combined.

Pour the batter into your cupcake tray or cake pan and bake in your preheated oven for 35 minutes (20 minutes for cupcakes) or until your knife or toothpick comes out clean. Let cool then it is time to frost.

Why Paleo

Paleo is also a good way to open another door to baking. If you are a baker and bake food other than paleo, then you bake something paleo. It is like another world! Paleo lets you experiment with so many new ingredients that I did not even know about! So trying something as basic as cupcakes, could open another world for you!

These paleo cupcakes are really easy to make. I think some people don’t try paleo because they think it might be hard! But the only thing that separates paleo and non-paleo are the ingredients. Coconut or almond flour, instead of whole grain flour. This recipe is just like making regular gluten-filled cupcakes.

Ingredients

  • 2 1/2 cups almond flour (**blended then sifted)
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup melted coconut oil (melted)
  • 4 eggs
  • 1 tablespoon almond milk
  • 1/2 cup honey
  • 1 teaspoon vanilla

Instructions

Start by preheating the oven to 350ºF. Line your cupcake tray with paper cupcake liners or reusable silicone cupcake liners.

In a large bowl whisk the almond flour, baking soda, and salt together. In a separate medium bowl whisk together the coconut oil, eggs, milk, honey, and vanilla until combined.

Once combined, pour the wet ingredients into the dry ingredients and whisk until combined. Once combined pour the batter into your tray and place into the oven to bake for 15 minutes. After 15 minutes test your cupcakes with a toothpick, if the toothpick does not come out clean, bake for 5 more minutes and test again. After your cupcakes are done, let them cool for 5 minutes then frost.

Notes

**I blended and sifted the almond flour so the cupcakes wouldn't have a grainy texture, but you can also use fine almond flour.
