Paleo Zucchini Brownies

These Paleo Zucchini Brownies are so delicious! These Paleo Zucchini Brownies are completely paleo and taste like regular brownies!

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup cacao powder
  • 1 teaspoon baking soda
  • 1 cup chocolate chips (divided)
  • A pinch of salt
  • 3 large eggs
  • 1 1/2 (2 small) zucchinis
  • 1/4 cup honey
  • 1/2 cup coconut oil
  • 1 teaspoons vanilla

Instructions

Start by preheating the oven to 350ºF. Line a 10 inch round casserole dish with parchment paper. Then grate your zucchinis and squeeze as much of the water out as you can.

In a small saucepan over medium-low heat, melt the coconut oil with 1/2 cup chocolate chips. Once melted remove from the burner and set aside to cool.

Then in a large bowl mix the almond flour, cacao powder, baking soda, and salt together. In a separate medium bowl mix the shredded zucchini, eggs, honey, and vanilla until combined.

Once combined pour in the mixture from the saucepan into the zucchini mixture and mix until combined.

Once combined pour the zucchini mixture into the flour mixture, and mix once more until combined. Once mixed pour your brownie batter into your pan. Place to bake in the oven for 25 minutes.

Paleo lets you experiment with so many new ingredients that I did not even know about! So trying something as basic as cupcakes, could open another world for you!

These paleo cupcakes are really easy to make. I think some people don’t try paleo because they think it might be hard! But the only thing that separates paleo and non-paleo are the ingredients. Coconut or almond flour, instead of whole grain flour. This recipe is just like making regular gluten-filled cupcakes.

Delicious Paleo Vanilla Cupcakes that tase like regular cupcakes!! These cupcakes are perfect for anyone who is starting the Paleo diet!

Ingredients

  • 2 1/2 cups almond flour (**blended then sifted)
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup melted coconut oil (melted)
  • 4 eggs
  • 1 tablespoon almond milk
  • 1/2 cup honey
  • 1 teaspoon vanilla

Instructions

Start by preheating the oven to 350ºF. Line your cupcake tray with paper cupcake liners or reusable silicone cupcake liners.

In a large bowl whisk the almond flour, baking soda, and salt together. In a separate medium bowl whisk together the coconut oil, eggs, milk, honey, and vanilla until combined.

Once combined, pour the wet ingredients into the dry ingredients and whisk until combined. Once combined pour the batter into your tray and place into the oven to bake for 15 minutes. After 15 minutes test your cupcakes with a toothpick, if the toothpick does not come out clean, bake for 5 more minutes and test again. After your cupcakes are done, let them cool for 5 minutes then frost.

Notes

**I blended and sifted the almond flour so the cupcakes wouldn't have a grainy texture, but you can also use fine almond flour.

Why Paleo Fudge Chocolate Frosting.

Have you ever made paleo cupcakes or anything paleo and realized you I need frosting to go with what you made? Well, I did! It was very hard to find a paleo frosting recipe. So I decided to make my own paleo frosting, Paleo Fudge Chocolate Frosting!

Why Fudge?

Normally when making frosting you use some sort of sugar, like cane sugar, confectioners sugar, or other types of sugars. In this fudge frosting recipe it is mainly based off of Chocolate Chips. Which makes this frosting a nice fudgy chocolate frosting! This recipe is so easy to make, it takes less than 10 minutes.

Frosting

Of course you don’t need frosting. You glaze your cupcakes or whatever with some sort of delicious topping like Honey. But this frosting gives your cupcake (of whatever you baked) a pop of flavor! It’s so delicious!

  • 1/4 cup coconut oil

  • 1/2 teaspoon vanilla

Instructions

Start by taking out a saucepan and pulling out your ingredients.

On medium low heat, pour in the coconut oil, almond milk, and 1 cup of the chocolate chips. Mix these until melted.

Once melted, add the salt and vanilla and mix. Then remove from heat, and add 1/2 cups chocolate chips (the rest of the chocolate chips). Stir.

Now your frosting is ready to be used.

**This frosting is not pipeable.

Guilt free paleo chocolate chip cookies! These cookie are so amazing and they take less then 15 minutes to make!

Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking soda
  • A pinch of salt
  • 2 tablespoons coconut oil (melted)
  • 1/4 cup maple syrup (or any paleo sweetener of your choice)
  • 1 teaspoon vanilla
  • 1/3 cup chocolate chips

Instructions

Gather all your ingredients and preheat your oven to 350ºF.

In a small bowl mix the almond flour, baking soda, and salt together.

Then pour in the coconut oil, maple syrup, and vanilla together.

Mix in the chocolate chips.

Line a tray with parchment paper or a reusable, oven safe, non-stick mat.

Shape the dough into balls in your hand and flatten them down to cookie shape.

Place in the oven and bake for 8 minutes.
