These Paleo Zucchini Brownies are so delicious! These Paleo Zucchini Brownies are completely paleo and taste like regular brownies!

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup cacao powder
  • 1 teaspoon baking soda
  • 1 cup chocolate chips (divided)
  • A pinch of salt
  • 3 large eggs
  • 1 1/2 (2 small) zucchinis
  • 1/4 cup honey
  • 1/2 cup coconut oil
  • 1 teaspoons vanilla

Instructions

Start by preheating the oven to 350ºF. Line a 10 inch round casserole dish with parchment paper. Then grate your zucchinis and squeeze as much of the water out as you can.

In a small saucepan over medium-low heat, melt the coconut oil with 1/2 cup chocolate chips. Once melted remove from the burner and set aside to cool.

Then in a large bowl mix the almond flour, cacao powder, baking soda, and salt together. In a separate medium bowl mix the shredded zucchini, eggs, honey, and vanilla until combined.

Once combined pour in the mixture from the saucepan into the zucchini mixture and mix until combined.

Once combined pour the zucchini mixture into the flour mixture, and mix once more until combined. Once mixed pour your brownie batter into your pan. Place to bake in the oven for 25 minutes.
